Recent studies conducted in Uzbekistan have shown that a definite conclusion has not yet been made about the amount of diastase in cotton honey, because it has constantly changed in different geographical regions. It was unequivocally revealed that the cotton honey of Uzbekistan had the least amount of diastase among other varieties of honey. Diastasis ranged from 7.0 to 44.9 Gote units. The studied diastase activity of cotton honey collected in the regions of Uzbekistan found that it is different in different regions and always changes depending on the region.

From the data of the table it can be seen that the diastatic activity of cotton honey collected from different regions of Uzbekistan was constantly changing in the studies.
If the diastase number in 92 samples of cotton honey collected in the Bukhara region of Uzbekistan averages 21.7, in 104 samples of cotton honey in the Samarkand region this indicator has 25.8 Gote units, in 7 samples of cotton honey in the Kashkadar region - 17.3. , in the Tashkent region in 48 samples - 17.3. The lowest value of diastase was found in 8 samples of cotton honey - 15.1 GOTE units in the Surkhandarya region.

It is noted that just pumped honey from cotton, diastasis is never less than 7-9 Gote units, i.e. always within the limits allowed by GOSTs. But with long-term storage of cotton honey in warehouses with high temperatures, the activity of the diastase enzyme in it drops significantly, and may drop below the requirements allowed by state standards. According to this indicator, old cotton honey can be rejected.

Cotton honey crystallization


Cotton honey is candied quite quickly, in 4 weeks or a little more - up to 2 months, forming small crystals, and in this form cotton honey is completely white. Ripened cotton honey has a soft, firm texture that is like whipped butter that does not melt or flow on a dish at room temperature.
